This is a very good idea and I think it would be trivial to implement.

I am interested in which kind of data can be passed to a service: only
marked text?  Would there be any other way to invoke it?

This can be done by having the GnomeApp widget auto-load the contents
of the $prefix/share/services and the ~/.gnome/share/services
directories.
