I know this is a "feature" by GitLab and I have criticized it there too. May other people also complained.
Here a short summary on why it is bad:
- It triggers way too often. (even for logged in users that are perfectly verified, have verified emails, potentially even for their own repos)
- It discriminates user either based on preference (not using Google, using tracking blockers) or disabilities (It is NOT accessible! Their audio challenge is a joke as it never works.)
- It's a privacy nightmare.
- Users may not want to train Googles AI.

I think this is not a thing GNOME should accept and I urge you to disable it. It is useless (note it only triggers for edits, not for new issues or so) and just annoys totally legitimate users, who are asked "out of the blue" to confirm they are not a robot. Users that have an account for many months!
