There is no such setting for a builtin clock applet.
Thanks Alberts. I had hoped to find a way to add abbreviated weekday (eg; Tue or Fri) before the date but it's not that big of a deal.

In indicator-applet-complete I can set a custom time (eg: %a, %b %d, %l:%M %p) by changing the settings in "com>canonical>indicator>datetime>custom-time-format" but I can't for the life of me find where to apply such custom settings for the actual separate clock applet.
