I'm not sure of your experience level, but I think you've probably picked one of the more technical applications to document. I don't say that to scare you off, but just to set the proper expectations - the terminal is a rather technically-oriented application, and will require that you either have that technical knowledge to start, or that you be willing to take the time to learn how the terminal may be used.
If you already have a Linux background - I think that drafting a high-level outline would be a good starting point. It will help to get you started, and will help us to make sure that you're on the right track. Plus, if you need to make significant changes, adjusting a high-level outline is easy.
The docs for gnome-terminal need to be completely rewritten, so the bugs should get fixed as part of the documentation writing process. A high level outline would include the sections that you'd like to include, as well as a sampling of topic titles that you'd like to include. You don't need to actually write out the help topics yet - just sketch things out with an outline. You can share the high-level outline on the mailing list, but feel free to also ask us questions on IRC.
