Wiki Page for Apps looking for new / updated docs

Hi GNOME Docs team,

I spent some time triaging GNOME Bugzilla and I've started a new wiki
page[1] that lists GNOME applications looking for new and / or updated
documentation.  I've linked those projects to the specific bugs in GNOME
Bugzilla.

If you're new to the GNOME Documentation team or looking for a project
to work on, this is a great place to start.
