Hi Jeff,
The best thing you can do is to pick an application you interested
with and you update the manual if it is not up-to-date.
You can also look for in bugzilla, bugs related to documentation, for
instance I found http://bugzilla.gnome.org/show_bug.cgi?id=496647 and
http://bugzilla.gnome.org/show_bug.cgi?id=314001.

I'm not sure how amount of work it requires to update these manuals.
