Doctable updates - GOK and Gnopernicus.

I have updated the Doctable to include the following GNOME applications that are 
being developed by Sun: 

- GNOME On-screen Keyboard
- Gnopernicus screen reader

As these are both accessibility applications, Irene will include them as part of 
the GNOME Accessibility Guide. 

I have also added some clarification to the following application names in the 
Doctable: 

- gtik_applet2
- gweather
- keyboard switcher
- mini-commander
- mixer_applet2
- grecord
