The "desktop font" setting is a special case, because it's configured
in the Fonts dialog, 5 pixels away from the "application font"
setting. That is, the desktop font _is_ one of the system fonts, so
"use system font" doesn't make any sense. Alex just pointed out to me
that we should probably have a "Monospace/Terminal font" option in the
fonts dialog too, because with "use system font" checked right now
gnome-terminal ends up with a really sucky font; it'd be better if
"use system font" in gnome-terminal meant "use system _monospace_
font"
