Wait a little more for 2.8 and you'll be able to change the language
in the Image: Edit -> Preferences dialog.

Or install 2.7.4 as explained on the official GIMP wbesite.

May be it was working with previous versions (I'm running Gimp 2.6 on
Ubuntu 11.04) but that doesn't work now.

I haven't found anything else on Google to help me out.  If you can
point me in some (right) directions I'd appreciate that.
