reset all information in the org.gnome.gedit.preferences.encodings , gedit
will continue auto-detected charactor encoding.


$ gsettings list-keys org.gnome.gedit.preferences.encodings
candidate-encodings

Or use the shell completion, or dconf-editor, or look at the schema in
the git repo. There are many ways.
