You should check out the "session saver" plugin in the "gedit-plugin"
package (it is likely to be provided by your distro)

FYI, during the review of gedit-plugins, we found that the session
saver plugin was too unstable to be included, so it is disabled on
Fedora 7. The complete review report can be found here, and if there
the problems are not known already, I will file a bug report to
bz.g.o.
