Yes, moving word wrapping in the menu is something we've been
considering for a while, I agree that it's often useful to change it on
the fly.
There is an open bug here:
http://bugzilla.gnome.org/show_bug.cgi?id=119428
The problem with moving this (and others) option to the menu is that we
are not compltely sure of how it should behave: should it affect all the
open tabs or just the current one? should it be persisted across closing
and reopening the app? etc.
