have nto seen any options on that?
The sessions menu is filled with the various *.desktop
files that are contained within /usr/share/xsessions,
although you can also have desktop files in other
directories. Refer to the documentation at
http://www.gnome.org/projects/gdm/docs.html
If you remove any unwanted *.desktop files, the choices
that correspond to the file will disappear from your
menu.
You can also control if the Failsafe Xterm and Failsafe
GNOME options show up in the menu via the
ShowGnomeFailsafeSession and ShowXtermFailsafeSession
configuration values in gdm.conf.
I don't think you can make the menu completely disappear,
but you can control the contents of the menu via these
options.
