If gconfd keeps crashing for some reason, it might do this due to a
large ~/.gconfd/saved_state file. To debug, you might run gconfd
in a debugger and see where it crashes.
I don't have any remotely recent reports of crashes (or huge CPU
usage), so I don't have any immediate guesses re: the problem.
You can also check log files for output.

Well, it was definately in the ~/.gconfd/saved_state file. Blew that
away and my problem with it taking over the CPU went away. NOW when I
start Gnome, I get LOTS of nautilus windows, hundreds. And upon
checking my logs:

Mutiple of the daemon starting, which causes:
/home/robert/.gconfd/lock/ior': probably another process has the lock,
or your operating system has NFS file locking misconfigured (Resource
temporarily unavailable)
