Well, that's not hard. ;)

I would suggest building the entire Desktop (as you are planning anyway)
to a $prefix other than the default. Something like /opt/gnome-2.8/
sounds sensible -- of course, only if the distro does not use this
prefix itself. Then add a "Gnome 2.8" session to GDM, which should call
the session script mentioned in the README, placed in /opt/gnome-2.8/.

(Personally I'm doing this anyway, cause I don't like a whole Desktop
environment in my $HOME. And I got root on my machines. ;-)  Besides
that, it enables me to run test users with the new Desktop.)

This should work out-of-the-box. The worst you may need to do is
adjusting permissions recursively for $prefix, to grant read/execute
permissions to other users.

Before rebuilding to another $prefix you need to run 'make clean',
AFAIK.


Spoiler:

Set GARCHIVEDIR in gar.con.mk if not already done. Then run 'make
garchive' for any package you already built or for all meta garballs
(like platform and desktop) you plan to build. So you don't need to
download everything again.

Run the above mentioned 'make clean' after that, cause this will remove
the downloaded tarballs from the garball dirs...
