You can either:

  a) patch gal/evolution to use non-deprecated widgets

  b) remove the *_DISABLE_DEPRECATED flags from the gal/evolution tarball
  build systems

  c) wait for a new release of evolution which will work against GTK+ 2.3 -
  this will most likely be a pre-release of evo2

Not good choices, but that's what testing and hacking on the bleeding edge
is all about! Pain, agony, and a fanatical devotion to the pope [1].
