Both the date as well as the X-Mailer: header probably should be updated
either manually for any stable release or automatically. What about the
release date and the current version?

Well, we are already in "UI and string change announcement period". Thus
any string changes to HEAD must be announced to both gnome-i18n and
gnome-doc-list already.

No need to ask for approval yet, though. :)
