No, the ""s are not part of the name, any more than the <>s are part of
the email address. If John wanted his middle initial in quotes, then his
mailer would (or at least should) have encoded it as:

	From: "John \"D.\" Grahame" <jdg company com>

or something very similar (and then evolution would [or at least should]
display it as he intended).
