Yeah, I'm really sorry for my tardiness.  I definitely suggest going
through with the patch and changing it after.  I've been keeping the
patch up to date since December and it's been tough.

As for a fallback mechanism, it should be really easy.  We can install
an icon tree in $pkgdir/icons or even /usr/share/icons/evolution.  Then,
we just call gnome_icon_theme_append_search_path.

I can make the changes to do so, but I would request that at least the
working patch we have now be committed.
