Thank you for your work on this! You are certainly improving the
usability (and accessibility) of Evolution with your work. I appreciate
your effort.

I can only see one small problem with the changes that you mentioned
below:

In order to make these access keys conform to the Gnome Human Interface
Guidelines (HIG), you should use consonants when they are available,
instead of vowels. Please see this link

To summarize: if the first letter of the word you are working with has
already been used as an access key in the same menu, then please choose
an easy to remember consonant from the label (for example, "p" in
Replace) as your access key. 

(Here, the set of vowels is defined to be the letters a, e, i, o, and u.
All other letters, including 'y' count as consonants.)

So, by this logic, the access key for "By Subject" should be "b", the
access key for "By Sender" should be "n", and the access key for "By
Follow-up Flag" should be "f".
