Hard to say without an (obfuscated) test case that someone else could

import into Evolution to try to reproduce, plus without knowing some

settings in your client (HTML or Plain Text format, signature, etc).

Client not being much help.   He doesn't know what version iOS is running on his iPhone and states

the he just uses the default  email client.   Image, emails and cell numbers removed.

Notice that his iPhone email seems to not  put the -- at the end before any signature.
