Thanks for the replies,
What I did was just create an "archive" folder and then (after someone
else replied) I then went into each individual account
Edit>preferences>individual account>defaults where I set "Archive
Folder" to "On this computer/Archive" where "Archive" is the folder I
created on "On this computer". This machine has three accounts so I
set it the same for all accounts. I thought that I had it except I
don't. If I select a message the option to archive the select message
(on the top bar) is still greyed out.
I've had a good look over this but can't see what I'm missing. Any
further insights welcomed.

I can't see this mentioned in the
"Help" anywhere although it may be in there somewhere.
It's mentioned in one sentence on the "Mail folder locations" page
(which is linked from each account management page). :)
I am using Evolution 3.28.5 on Ubuntu0.18.04.1.
