My apologies, for the OP this perhaps was a confusing conversation.
Gottfried simply run
evolution --force-shutdown
evolution &>log.txt
or perhaps
evolution --force-shutdown
pgrep -a evolution
evolution &>log.txt
No output by running "pgrep -a evolution" means that everything is
terminated, IOW "evolution --force-shutdown" did shutdown everything.
