In my version it's in EDIT --> Evolution PREFERENCES --> MAIL ACCOUNTS
--> EDIT the one you suspect to produce the receipt confirmations --> 
ACCOUNT EDITOR --> DEFAULTS --> MESSAGE RECEIPTS :-o
