Doesn't happen very often, something about once or twice a day, but if
the timing is bad, it's very annoying. Also running an 3rd generation
i7, 8GB RAM, up to date Arch Linux x64.

An unlucky typo :D. Should it be x86, aka 32-bit or x86_64, aka 64-bit?
For a "i7, 8GB RAM" I read "x86_64, aka 64-bit" ;).
Indeed Evolution sometimes is a PITA, but on my Athlon 2.1 GHz dual-core
Arch Linux 64-bit machine, writing mails doesn't cause hanging-issues.
What DE do you use? I'm running Xfce.
