How about using Bcc when writing to a lot of people at the same time. As you have found there is a privacy issue when using CC or To but Bcc neatly hides everyone from everyone else although they can all reply to you. It's the same as CC except it's "Blind CC". There always has to be something in the "To" field so a lot of people just put their own email address in there.
