To be honest, I can't make much of this. Is there any way to get more
(verbose) traces?

more verbose? CALDAV_DEBUG=all means "all", you cannot get more from
it :)
What I understand from the snippet is that the CalDAV backend asked your
server for options on the CalDAV calendar, but I do not see whether the
server responded with anything (you snap it). All lines with ">" are
values sent by the client, where lines with "<" are those received from
the server.
(evolution:14354): libecal-WARNING **: Cannot get cal from factory:
GDBus.Error:org.freedesktop.DBus.Error.ServiceUnknown: The name
org.gnome.evolution.dataserver.Calendar was not provided by
any .service files
Yeah, you may tell DBus where .service files for the custom build of eds
are. There are couple threads about this issue in evolution-list, if I
recall correctly, though even if not, then try Google, it'll tell you
for sure.
