you didn't indicate what version of evolution (-data-server) you are
using, but the upcoming 3.0.0 depends on latest libgdata and supports
most (if not all) of the fields you named above. The Google addressbook
backend was also massively rewritten by the libgdata developer for
3.0.0, thus expect some improvements too.

Also, take a look at syncevolution + mobical. A bit circuitous, but it
supports all the relevant fields (including birthdays) right now
without needing to wait for 3.0.0.
