Run evolution under a terminal from a debugger, e.g. gdb. Look at the
stack trace. Maybe, you've got a tool like apport here on ubuntu which
collects crash data automatically.

I have had the same problem and finally decided to submit a bug report.

Sounds like we have similar bugs. Very interesting. I'm glad I am not
alone.
I traced mine and submitted it as

ABRT rocks ! I had to disable my livna repository and then increase the
maximum bug report length in order to report it. Once I did that, it
logged it perfectly.
