You can edit your launcher / menu item to include "--component=mail",
which will always open Evolution in the email component. From "man
evolution":

-c, --component=COMPONENT
              Start  Evolution by activating the desired component.  COMPONENT
              is one of `mail', `calendar', `contacts', `tasks', `memos'.
