[Evolution] Default signature ??

Hi;

I used to have a default signature in my compose window.  I had to
re-install Evolution; I have recreated my signatures; but I can't set up
a default other than "None".

Help simply says:

"The signature editor allows you to create several different signatures
in plain text or in HTML, and to specify which of them will be added to
e-mail you create in the message composer."

But not how it is done.
