Evolution is not a mail server, it's mail client. You can keep using Evo
with a Zimbra server, which works under IMAP, though obviously not with
all the Zimbra features.

the lines of the Exchange connector, which then, would allow them to
take the information they all have locally stored in their Evolution,
that has built up over the years, and then put it on their new Zimbra
server.

Does someone know how we convert the e-mail (with filters and
folders), calendar and contacts for direct use under Zimbra?

I'm pretty sure Zimbra has extensive documentation on conversion. You
need to look for terms like POP, IMAP and LDAP, and find out what your
current *server* is.

I believe, most of the information is local to each instance of
Evolution, since they are looking for filters, calendar, and contact
conversion, so it wouldn't involve, necessarily any of POP, IMAP or
LDAP.
