No.. the current stable release  (which is Evolution 2.12.1 )  does not support Exchange 2007.
However, a bunch of developers are working on MAPI-based Exchange support for Evolution, which would work with the 2007 servers too !!

The source code for Exchange MAPI is on these branches: [note however that it is still under development]
