Hi, Pete.
This is done in Nautilus, not in evo. Find a .doc file, right click,
and go to the "Open With" tab. Select the program you want, and you're
done. Evo will respect those settings.

Ah, so I'll have to install Nautilus...with XUbuntu, I'm running Xfce as
the window/desktop manager. I thought there might merely be a file I
could tweak, since I don't have much Gnome stuff installed...

No, I don't think you have to install Nautilus. I think you just have
to set the default "mime type" for your desktop. Thus whatever desktop
you are using opens OOo.
I have just moved from Gnome to KDE so I am not sure where this is done yet.
