all messages in a folder: use "control+a" + "control+k".
all messages in evolution: set up a "search folder" without any

having root access, you can change/add accelerator keys of existing menu
items by editing the corresponding xml files.
for the relevant files, have a look at the xml files in your
/usr/share/evolution/2.4/ui/ directory (depends on distro style; e.g.
suse distro uses /opt/gnome/share/evolution/2.4/ui/ instead).
be careful though, as you can easily break things.
