[Evolution] Signatures

Signature maintenance seems to be a problem with Evolution. Creating a
signature is easy (altho' looking under Accounts was the last thing I
thought of) and changing a signature from the list on a new mail item is
equally simple.
But editing an existing signature does not seem so easy. I found the
home/.evolution/signatures directory but when I open a signature and try
to change it things like word-wrap go awry. And there is no means to
delete a signature (or at any rate I can't find one) from within the
interface. I tried deleting signatures from the folder, but they remain
in the drop-down list.
So say I have a 'formal' signature and need to edit it - if I make
changes in the signature file (unhelpfully called signature-n where n is
a numeral) when I reuse it the wrapping may no longer be correct. If I
delete it from the folder I cannot create a new one of the same name
because the interface thinks the previous (deleted) one still exists.
Or have I missed something elementary?
