Shame on me ! I had a "contains mail.com" rule condition that shoud have
been "is mail.com"...
But I didn't know where and how the rules were stored so I learned
something useful that enabled me to spot the problem.

well that's odd.
take a look at $HOME/evolution/filters.xml, that's where all the filter
rules are stored.
search for the criteria because of which the mail is moved to the other
folder, e.g. an entry like "<address>email test com</address>". if oyu
find one, delete it but be sure you delete the entire rule from <rule>
to </rule> (a backup wouldn't be too bad).
i also shortly thought about having set this special folder by mistake
to your "default sent-folder" in the options, but this does not seem to
be the case...
