Regarding Evolution 2.0 [1] I'm not sure about filtering ATM, so I trust
NotZed. However, Evo 2.0 can at least sort on Categories in the list
view, which might help you a lot.

At least the "Select Contacts" dialog can filter on Categories, which is
useful. Not sure about the list view though, but it probably is way
better supported in 2.0.

[1]  Evolution 2.0 will be the next major stable release. The current
*development* versions 1.5.x already have this feature.
