There are no linux-targetting email viruses, and as yet, evolution is not vulnerable to any (none of nothing indeed).  So there is no antivirus scanner that would do anything useful yet, for evolution or linux.

If you want a windows virus scanner to check your mail before you send it on, evolution probably isn't the place to do it, but the mail server is.
