I have had the same issue with Evolution hanging, for me its usually while composing an email, but sometimes just sitting there it will hang and pop up the message about your application becoming unresponsive. Im running Redhat 9.....
Ron, you might want to check your .xsession-errors file for more specific info, or you can start evolution from the command line, but make sure you add
CAMEL_VERBOSE_DEBUG=1 to your enviroment before you do....
