If you try running evolution in a terminal, what sort of warnings do you
get?

It sounds like a gconf issue, perhaps it's resorting to an in-memory
database (which wont get saved obviously), but it should pop up a window
with an error about it, i think.

I'm running on rh9, i'll try installing ximians package and see if i get
similar issues.

Did also try the removal of the extra info in /etc/hosts file, but that 
didn't help either.

I have no idea what could possibly be happening here, but I wonder if
maybe your gconf is broken or something? it's the only conclusion I can
come up with that makes any sense...
