I can't answer your questions for Evo 1.0.8; it is now very much
obsolete compared to the current release, 1.2.1; I suggest you upgrade.
I'll try to answer your questions; the answers may vary slightly or not
work at all for 1.0.8; I forget some of what has changed between
versions.

You can choose fonts via Tools->Settings->Font Preferences. In 1.0.8, I
believe it's under Tools->Options. Note that in 1.0.8 you must restart
Evolution for these changes to work (I'm not sure you need to restart
with 1.2.1).
3.How can make Evolution pop up a small alert box whenever new message
arrives (just like outlook does)?
I am using Evolution 1.0.8 on RH8.0
Upgrading to 1.2.1 will allow you to have Evolution beep or play your
choice of sound when new mail arrives. I don't know of any way to pop
up an alert box, although it may be possible via filters and shell
scripts (again, only in 1.2.x).
