AFAIK this issue will be solved in the forthcoming Evolution 2.0
release. IIRC it will remember the last seen message, even after closing
Evolution.

Personal note: I sort my mails with newest on top. That way I will be
presented with new mails even after closing Evolution. ;)
Yes, you can do do that. But, here where i come from, we read from left to
right and from up to down :-)
