I went through the same thing.  The setting is in Gnome.  Whatever the
default is for Gnome is what Evolution uses.  Thanks to some hardware
problems, I'm going to need to do that. again.  Go to "Configuration",
then "Gnome", then "Gnome Control Center".  One of the options there is
"Preferred Applications".  You can select your preferences for browser,
text editor & terminal.
