[Evolution] Iso 8559-2 Problem

I use evolution 1.2.2
when I run evolution font desnt set Iso-8559-2 encoding to
all hole program so I have that go to options->font preferences
and change to order to view my encoding.
Any ides how at least set this globaly for my users.
