The file which defines the printing possibilities is in the following
directory:

/usr/share/gnome-print/profiles

The specific file for "Generic Postscript" is
PostscriptOptimized.profile.  You may also want to create a new profile
XPP.profile and include your command in it.  

To change from lpr to xpp you must edit the following line
output=command,lpr
obviously replacing lpr with xpp.

You must restart evolution for the change to take effect.
