With that clue, I found the right dialog on Red Hat 7.2 with KDE under
Preferences | Look & Feel | Colors. I selected "Media Peach", then
"Apply". Evolution didn't update so I clicked the close widget, figuring
maybe it didn't monitor for this and needed a restart, and I got the
"Evo has crashed" notification. When I restarted it, it had the new
color scheme.
