In evolution 1.0.x:

     1. Exit evolution 
     2. start the gnome control center
     3. change the settings in the HTML Viewer section
     4. start evolution

In the development version:

     1. Select Tools->Preferences...
     2. Choose the fonts tab
     3. change the fonts.
