If you're using local mailboxes, you can copy
~/evolution/local/Inbox/mbox (eg) somewhere else -- the mail is stored
in mbox format, which almost every Unix mail program understands.

If you're using IMAP, well, you should just connect to the IMAP server
with your other programs.
