That folder is supposed to always show up.
If you create VFolders and then click on
one or more of your VFolders, you'll find 
that UNMATCHED will be updated to contain
the messages that _weren't_ matched by your
VFolder.  As you click on the VFolders, each
VFolder's matches will be removed from the 
list of UNMATCHED, if they haven't already
been removed due to a previously viewed
VFolder.
